Weekend Randomness

I'm always sad to see the weekend come to an end...okay, maybe not always. But I am today. Our weekend was busy, fun, and at times thankfully a little lazy - though there could have definitely been more lazy to it. I had a friend filled Friday, meeting one friend for coffee in the afternoon and another in the evening. Those times with friends are so special and so refreshing to the soul. Elijah sold a lot of Boy Scout popcorn this weekend. Here he is in his brand new uniform. I still need to transfer his patches from the old uniform.


I can hardly stand how adorable, er, I mean handsome he is! I know, the shirt is pretty big but he will grow into it before long.

We've had a bit of unseasonably warm weather here, which, after a round of cold weather food has put me back in the mood for more summery fare. I decided to try some of the recipes that I've pinned to my Food board on Pinterest. (If you're not familiar with that site, it's awesome and you should totally check it out! Though I warn you, it is very addicting. I seriously have to limit my time out there.) This is what we had for dinner last night.

I made this amazing Artichoke Bread from Closet Cooking. You've probably noticed mine looks a bit more like pizza than bread, well, that's because it is. I didn't have any Italian bread so I opted to spread the artichoke mixture onto what I did have, which was pizza crust. Yummy! We didn't miss the bread at all! The salad is actually quite simple - spinach, tomatoes, fresh mozzarella, and basil, topped with a vinaigrette dressing. I wish there were leftovers for my breakfast!

I loved coffee with you!!! I missed you so much! Now I have my Cindy fix for a while to tide me over until next time. :-)
